Slow Cooked Beef Stew

This is yet another take on beef stew I’ve tried and thought I’d share:

Ingredients:

1 1-pound bag of baby carrots

2 pounds of boneless beef chuck roast, cubed

2 large potatoes, cubed

1 (10 3/4oz) can condensed cream of tomato soup

1 cup water

1 (1/5oz) envelope beef stew seasoning mix

Directions:

Cut carrots in half crosswise. Place beef, carrots, and potatoes in slow cooker. In a bowl, whisk together the soup, water and seasoning mix. Pour over beef and vegetables. Cover and cook on:

Low for 8 hours and High 4 hours.

Makes 3 quarts

To double this recipe, use a 5-6.5 quart crock pot and double the amount of carrots, potatoes, cream of tomato soup and seasoning mix. Use another pound of roast and another 1/2 cup of water to dilute the soup in the wet mixture.
